Ian J. Kirby
Ian Kirby is a Massachusetts native who tends to spend summers in Edgartown, Martha's Vineyard and winters down in Palm Beach, Florida. He graduated undergraduate at Palm Beach Atlantic University and the London School of Economics, where he studied International Business and European Governmental Policy.
Ian holds positions as the Vice Chair of Events for the Palm Beach Chamber of Commerce's PYBP group, a Registered Investment Adviser, and a Fellow of the Staring Bloc Institute.
Before becoming the head of the club, he had been a manager of Palm Beach Restaurant Group, co-founder of several successful start-ups, worked in web design and business development, was a financial modeler in M&A ventures in Pittsburgh, PA, and managed the outdoor department of Eau Palm Beach Resort and Spa. Some of his interests include home beer brewing, crew, dining, reading, networking, investing, and golfing. When he is not working, he likes to spend time with his wife in the Palm Beaches.
A native of Warwick, NY, Chef Kevin Knieriemen launched his culinary career working in restaurants in upstate New York, until moving to Palm Beach, with stops in Baltimore and Myrtle Beach, more than a decade ago. A graduate of Johnson & Wales, Kevin joined the former Ritz-Carlton Palm Beach in the early 2000s as a line cook.
As he continued to rise through the ranks with Ritz-Carlton, he served on several different task force teams at such locations as Vail, CO; Fort Lauderdale, South Beach, Singer Island and Naples, FL, which enabled him to hone his skills while working in many different kitchens.
Kevin was named Chef de Cuisine at Breeze Ocean Kitchen which debuted at Eau Palm Beach in December 2015 after a major makeover. In addition, Kevin also oversees all of La Coquille’s daily menus and special event menus. Leading a team of five cooks, Kevin developed a menu that is a celebration of Floridian cuisine featuring a blend of Latin, Caribbean, Asian and American flavors, utilizing local seafood and seasonal produce. Kevin enjoys participating in a variety of community events, including the Palm Beach Food & Wine Festival, dinners at Swank Farm in Loxahatchee and the No Kid Hungry/Share our Strength program. When not at the resort, Kevin can be found playing his guitar and spending time with his wife and their 4-year-old daughter.
Amanda is The La Coquille Club Coordinator with multiple years of experience in adminstrative duties. She specializes in guest services and social media. Amanda has a magnetic presence and positive outlook as well as a passion for helping others. As a young woman, Amanda spent her summers volunteering with the Greensboro, NC Police Department and competing in piano festivals with the North Carolina Federation of Music. Amanda also has experience working with adolescents and adults as a BHT and group counseler at Drug Addiction Treatment programs. In her free time Amanda likes to read, travel and volunteer.
